Not quite true. Toriel Sans and Martlet all visibly bleed when they die.

Toriel is the subtle one: she bleeds from her mouth. The other two explicitly drip blood.

Toriel might be blood or could just be her jaw cutted wich would be way mire brutal
Sans's one its still a debate today as the dude drinks ketchup a lot and keeps a bottle with him
Martlet seems like an effect rather than actual bleeding, besides would be weord to show blood in these moments wich would stablish that monsters bleed and then ignore it with everyone else

You can see Toriel's jaw right afterwards, and it's still intact.
Sans bleeds from both his torso and his mouth - way more than what you'd get from a ketchup bottle.
Blood drips from Martlet's wound when Flowey lifts her up.

Also, having every monster in the game die an explicitly bloody death would push up the age rating.

Neither of these, with sole exception of sans(and even then it's not 100% certain) is blood. Monsters in UT are made out of magic and turn into dust on death after either Falling Down or getting damaged too much. Please, replay the game and try not to speedread.

That might be the very reason for the discrepancy: in that one, you actually see Clover doing the deed.
