Yeah, i mean... gargoyles turn to flesh when they're not stone, right? I don't think you can just carve them when they're stone once they're alive either, unless she's some kind of construct rather than a living creature. It would be like trying to sculpt someone's bones. This is the kind of thing that would just leave a lot of injuries.
