I've been browsing through some birdo pictures, and i've noticed that lot of the have "CrossGender" tags. why is that? Isn't Birdo a species and not a only person? If so, then should we remove the "CrossGender" tags from birdo?

Birdo isn't a species, and she's also known as Catherine in Japan.

But the manuel says "she" is a "he" and thats their reason for tagging Crossgender.

A lot of things get lost in translation, just like how Poison from Final Fight is a different gender based on whether you're in America or Japan.

Or which game you're playing- Poison has been stated to be a post-op transsexual as well as a woman in separate games in America.
As for Birdo; http://en.wikipedia.org/wiki/Birdo and http://en.wikipedia.org/wiki/Captain_Rainbow (Check the characters blurb on Birdo). Birdo's gender has been played with to the point it's indeterminate unless Nintendo tehmselves straighten everything out once and for all, but it's been reasonably understood to be a transsexual character in general.

Ahh yes Birdo the first transgender video game character. "A pink creature of indeterminate gender that some say would rather be called Birdetta." - Brawl Trophy text.
The "Birdetta" thing comes from the original SMB2 manual, though in Mario & Luigi: Superstar Saga Birdo asks in-game to be referred to as "Birdie". The voice actor who voiced her in the commercial for Super Mario Bros. 2 USA appears to have been male, as was the voice actor for her in Captain Rainbow which you can see more about above.
Also Birdo and Yoshi are apparently an official couple. The Japanese website for Mario Kart: Double Dash!! put it this way
"Catherine appears to be Yoshi's girlfriend... or does that mean boyfriend!?" I think the pairing is incredibly adorable <3
Much more info here http://www.mariowiki.com/birdo

Yeah, but that's not so relevant. I mean, Ash was voiced by a woman, the original Peter Pan was played by a woman, etc.
I'm just picking nits, here, I think everything else you had to say was pretty legit.

All of that is background information, which should not be tagged.

Given that Birdo has no stated gender, if there are no obvious identifying features of gender, tag ambiguous gender. Crossgender is not the tag you're looking for.

I thought it was speciies cause there's blue birdo's and stuff.

Well if Manuel said so, it must be true. I don't quite know how some random Spanish guy knows so much about a Mario character, but, whatever. >.>

I fucking lost it at that.

Agree with Riversyde on this one. Ambiguous gender is probably the best tag to go with.

Is that crossdressing tag really appropriate there? Birdo has no set gender.

I can't even tell the gender of the person wearing that.
From the comments I've seen when it was posted elsewhere it's a man, can't remember what they said his name was though.

It wasn't just an androgynous-ish voice like we get with Ash- It was a flat-out male voice in Captain Rainbow (not sure of the commercial). S/he was also arrested for trying to go into the girl's bathroom (Yeah, it's a weird game). They willingly play with it, hard. It's meeeeean.
