Not always, that would be a wet caramel, which I personally don't much like.
The water makes it more likely to crystallize easily as it becomes caramel, gives it a grainy texture I don't like.

Dry caramels are less temperamental, but you have to be more careful of the possibility of burning them.
You literally just put sugar in a pan, and add heat until it becomes caramel.

If you add some fat in once it becomes caramel you get a chewy caramel.
No fat and it'll be crunchy, like a brittle, it's actually how you make brittle.
If the fat is butter, you get butterscotch, protip: use clarified butter it doesn't have water in it so it won't cause that grainy texture you get with wet caramels.

Oh, and a candy thermometer is a good idea, can help you prevent that burning.

Yep, sugar actually contains a small amount of water naturally, so add enough heat and it literally dissolves into itself.

It has it's uses, Crème brûlée for example uses the bitter taste of the burnt sugar as a counterpoint to the sweetness and richness of the custard underneath.

When I studied to be a chef a few years ago, I learned how to make my own caramel from scratch.

I love making it. :P

Yep, and if you invest a bit in some nice finishing salts, you can make those fancy salted caramels for a few cents a piece instead of a few dollars a piece that the candy shops tend to charge for them.

Please tell me you at least didn't spill the hot syrup on yourself?
I assume you didn't have a candy thermometer, that's the best way to do it, go very slow, with low temperature on your stove and turn it up a bit at a time until you hit the temperature range you need.
You can stir it until it's all dissolved, but after that you don't stir until you're at temperature, then you add other ingredients if you intend to.
You should use a wooden utensil for stirring, or plastic if it's rated for higher temperatures(silicone is usually good), never metal.

It takes patience, and practice, I burned a whole lot of sugar before I ever got it right.
Oh, and never use non-stick.
It might seem like a good idea since sugar is sticky, but you can end up with bits of Teflon in your caramel.

The good news, a cup of sugar costs very little, so it's a cheap mess up :)

Edit: a tablespoon of a fructose based syrup(corn syrup, agave nectar etc.) will help prevent crystals from forming since the different sugars don't crystallize well together.

Kmart, Walmart, Target, pretty much any store with kitchen supplies.
Cheap ones will only run you around $3-5, if you want to get really fancy you can get a no touch infrared thermometer, cost you anywhere from $30 to $700+ for super fancy ones.
Can find em online easy enough, but the cheap basic model works just fine, and usually has marking on it for the various candy making stages.

It's definitely something that takes practice, but it so worth it.
Once you get the hang of it, and have the right tools it's quick and easy.
Nothing beats a nice batch of scratch made caramel, tastes much better than anything store bought.

Great on ice cream, can make homemade brittle, caramel apples made from scratch in the fall, little hand made chewy candies for your friends/family.
All just made from sugar and proper application of heat :)

What is your non-stick Pan made out of? My pan goes up to ~300°C/572°F before something happens to the coating. A proper coating should also easily withstand anything below ceramic knives and steel.
I could have also bought one that can withstand temperatures till 400°C but to reach that temperature I would need to burn down my kitchen before it gets even close.
But this does sound interesting, may have to invest in a cooking thermometer.

Oh, Nutella is best candy. Right up there with belgian chocolate and marzipan.

There used to be this sort of dessert ball thing when I was in school, had the consistency of extremely thick peanut butter, but it was sort of a chocolate flavor, with raisins and peanuts mixed in. I haven't had it in over 15 years, but I sure do miss those. Still no idea what was in them, or what they were called.

No, they're not soft like that, they look hard and sharp, and you have to actually work at them to get a bite off. It's definitely a crystallized form of sugar of some type.

And no, it's not candy pebbles or rock candy. It almost has the consistency of that green Oasis foam that people stick flowers into, but harder.

Since this is related to the thread, believe it or not when I was younger, I hold a dental record for 13 cavities in one visit from eating so much candy. I still hold it to this day

Fritz Kola ftw. Double the amount of caffeine with half the amount of carbon dioxide and not as sweet as either. Alas, you shouldn't drink it like water, which is sad because it tastes awesome.

I don't drink any soft drink due to my anxiety issues. No caffeine for me.

I stick to drinking herbal teas which I make myself or just plain water.

I will drink Sprite when I eat at a sit down restaurant.
Dr. Pepper when I get Burger king, Mountain Dew when I get Taco Bell, or order Pizza.
When I am driving farther than a 1 hour trip or so, I'll get a coffee(usually iced) or energy drink(usually Monster Rehab).
Aside from that, I mostly drink water, milk, and iced or hot tea.
