Are there tags that I just don't know about that are for like, specifying how many of each gender are in an orgy/foursome/etc or no..?
No. There's ffm_threesome and mmf_threesome but that's about it.
EDIT: Apparently there's also ffm and mmf, which in both cases are mostly posts that should have been tagged with the respective threesome tags but weren't.

even those aren't fully canonized tags, they don't have any implcations or anything, and they only exist for m/f.
honestly, these seem kinda overly specific to me. I feel like if we wanted to have group sex gender ratio tags like these it'd be better to have something more scalable to larger group sizes, rather than a tags that only aplies to threesomes... and even then I'm not sure, once you go beyond the male:female binary and include all seven genders it feels like it'd be hard to really create good, useful tags.

The former two specifically involve sex (or imminent sex/post-sex) between three characters, the latter two seems to describe any situation where there are three characters where two are of one sex, and one character is the opposite sex.
I don't see a problem with the tag conceptually, although the name isn't fantastic.

I'd guess that the composition of a heterosexual threesome is usually of greater interest than the composition of a group sex scene involving four or more characters, the dynamics of a two-male-one-female and two-female-one-male threesome vary and there are hundreds, if not thousands of posts that could fall under these posts, it's a worthwhile concept for a tag, and one that is otherwise impossible to search — male/female threesome isn't specific enough.
I was thinking of having a tags with definitions like
group posts where a significant majority/minority of characters are <gender>
would be more scalable to larger groups as well as expanded horizontally to include the other genders, and then also create a mixed_gender_group for geoups with roughly equal gender representation.
but I'm not sure what I'd want the tagnames to be though, <gender>_majority sounds fine but... <gender>_minority not quite so much.

You might be able to use the *_focus tags for that purpose. I see no reason why female_focus shouldn't apply for posts where you have to search to find the one male or vice versa.
