At the very least, SoFurry allows users to tag stories, not just uploaders, so it's a much better system than something like FA. It really could use better tag standardization and rules though.

I know right? Do a google search and you'll drown in yiff pics, but stories are bloody impossible! made a similiar thread a while back but never really got anything ot of it :V

Uh, Archive Of Our Own attempts to tag their stories, and they seem to follow some tagging conventions. See here https://archiveofourown.org/tags/Pokephilia/works

The "e621 equivalent" part, though, you're not going to find. To me, that means users (not necessarily writers) collecting stories from different sites and attempting to organize them in a single library. Quality filter would be harder to enforce than with visual art beyond checking for okay spelling and grammar, length, and formatting.
