I'm fairly sure e621 used to have a view counter on each submission on the left hand side, has it been removed?, if so why? or am i mis-remembering something else...

It used to, but was removed due to performance issues.

performance issues? i find that pretty surprising, surely there's a way to overcome that like only counting every 100 or like youtube and not displaying the viewcount until after a certain amount of time after uploading.

It's more nuanced than sampling or hiding the information. The amount of resources involved in keeping a little number going up can be surprisingly high at the scale that e621 is at. It's on my list of things to get working again, but it isn't a high priority.
